What distinguishes Roman Candle Pizza is its dedication to making every pizza from scratch every single day, and using only the freshest natural ingredients. That includes sourcing its produce and cheese from nearby farms, which helps support local farmers.
"Keeping our pizzas pure takes more time and planning, but it's the right way to do it," explains the restaurant's founder, Brewer Stouffer. "We use only fresh produce, never frozen. Toppings are hand-chopped, fresh everyday. We make our pizza dough every day using unbromated flour, without preservatives and without sugar, keeping it pure and fresh."
On the menu, pizza lovers will find a variety of freshly made specialty pies such as the spicy, sausage-laden Roman Candle, the rich and savory Algo Malo made with arugula and blue cheese, and the tropics-inspired Hot-Wa-ii. Customers can also create their own pizzas by choosing among six sauces and 30 toppings that include fresh beets and roasted red peppers in addition to the more traditional meat and vegetable options. Vegans and vegetarians have plenty of combos to choose from, and any pizza can be made cheese-less or vegan.
"We've joked about our menu getting too big, so we keep our customer favorites on the menu, but you can order any of our specialty pizzas -- even those taken off the menu -- anytime!" says Stouffer. The restaurant also serves up a selection of craft beer and wine from Wisconsin brewers and wineries.
Stouffer launched his pizzeria a decade ago to create a venue where Madison residents could gather to "eat, drink and be merry." He had visited pizza restaurants throughout the U.S. and Europe and realized that Madison was lacking a fun and casual place to enjoy pizza like the establishments he visited as a kid growing up in Austin. Ten years after its launch, Roman Candle Pizza now consists of five restaurants in Wisconsin and can be franchised. The restaurant's concept is adaptable to a wide variety of spaces, from strip malls to office buildings.
As Roman Candle has become part of the Madison community, the restaurant is happy to host charity events, community day events, and support local businesses. They've made donations to silent auctions, donating more than $50,000 of value and donations back into the local community. Any type of event can be hosted at one of the five existing locations. Roman Candle Pizza also offers special events throughout the week such as Kid's Happy Hour and Monday Funday to engage its regular customers and attract new ones.
